More rain and overcast skies come Monday morning made it even tougher to get moving than usual for a Monday; I felt pretty beat! Went on with the day like normal though, gazelle, work, cleaning for Bible study, the usual. Dinner was a bit of a free-for-all. Zach ate some leftovers and I just made myself an open-faced fried egg sandwich with some light mayo and found myself finishing my supper off while we started Bible study. We’ve covered half of Isaiah now and it’s no joke! A tough and interesting book to delve into. Which means we’re due for a party and are having one next week. 🙂

The skies were actually blue and the sun was out when everyone left so Zach and I got in a beautiful 25 minute walk around the neighborhood. I am sure not taking being outside for granted this summer! When we got home Zach worked a little on the nursery wall while I had Concannons and watched Netflix…I think he got the raw end of the deal that time. 😉 Though then again, he isn’t the one who is growing a baby 24 hours a day! We were both tired and went to bed a little early. For the very first time I implemented the “pillow between the legs” and found it to be a HUGE help as sleeping has started to get a little more challenging over the past week.

Monday’s Food Journal:

  • Breakfast – nectarine, 1 pc. ww bread w/brown sugar
  • Lunch – brussels sprouts, turkey dog
  • Supper – fried egg sandwich (1 slice ww bread), grapes, cheesecake

The sun was actually out and shining when I woke up Tuesday and with the exception of a very cloudy period briefly in the afternoon, we had the clearest day in awhile. This made doing all my normal things feel much brighter. 🙂 After the gazelle I made some oatmeal for breakfast and it wasn’t too long after that I found myself preparing a crockpot dinner for that night. From my Fix-It and Forget-It I found a Teriyaki Chicken recipe that sounded good and simple with only a handful of ingredients! I trimmed the fat off of boneless chicken thighs and put them in the crockpot and made a sauce to cover them from brown sugar, chopped garlic, grated ginger and soy sauce (I use Tamari for the much lower sodium content). Here it is sans soy sauce-



Poured it over the chicken and let it cook all day long. It started smelling great! At nap-time I took advantage of what the kids had for lunch and ate a small bowl of their macaroni with my salad. Not a typical lunch-time staple but it sure takes me back. 🙂 In the afternoon, despite the mud and puddles I took the kids out. I just couldn’t stand to keep them inside when it was 80 degrees and the sun was shining! They got pretty muddy of course but it was good for all of us.

At the end of the workday I made brown rice and stir-fry veggies with a little soy sauce to go with our dinner. Tender chicken topped the rice, veggies on the side.


This was definitely more my kind of meal than Zach’s. Don’t get me wrong, he ate all his and then some but he has never loved soy sauce as much as me.


I really liked this though from a cooking standpoint and an eating one. Easy to make and plenty yummy for me!


Probably wouldn’t make this for him again but it’s definitely one my mom would like so perhaps that’s when I’ll bring it back out of my archives… We had a busy night after dinner that included lots of running around. To multiple stores trying to find specific clothes for an upcoming wedding that Zach is in, to another store to get shower gifts for a friend’s shower this evening, to Lowes to get some paint for the wood wall project, to Zach’s parents to pick up a tool, to Dairy Queen for ice cream (wonder who THAT errand was for?!) and back home. Zach worked yet some more on the wall and now, with the exception of the bottom row that needs to be specially cut, it’s all up!! I can’t wait to share some nursery pictures with you, it’s looking good. 🙂 Slept with the pillow between my legs again which I have a feeling may now be a thing for the rest of my pregnancy….

Tuesday’s Food Journal:

  • Breakfast – oatmeal w/blueberries
  • Lunch – salad, small bowl of macaroni
  • Supper – chicken w/brown rice, stir-fry veggies, small ice cream
