Updating from Chicago, Illinois right at this moment so I’ll keep it brief. We are having an amazing time with the best views, beautiful weather (best in ages), great food and lots of fun. So here’s what Thursday looked like-

Gazelle, work, a simple but yummy spaghetti squash for lunch with just butter, tomatoes and S+P. After work 20 minutes on the treadmill (1.5 miles) while my sweetheart was at home fixing dinner. He had found a recipe for venison pizza and a recipe for a marinated venison and combined the two. The day before he marinated flank steaks in apple cider vinegar, mustard, dry mustard and some other spices. I put the meat and marinade into the crockpot in the afternoon and they cooked the rest of the day. That was the only step I was in charge of, the rest was all Zach! And in cute fashion, he even took some pictures of the process while I was at the gym. 🙂

I don’t know all the details but he had a pre-made pizza crust and he roasted a lot of vegetables. Then he brushed the crust with olive oil and layered on the veggies, venison and cheese and baked it.



This was AMAZING. No joke!! One of the best homemade pizzas I’ve had and definitely Zach’s best recipe in a long time.


It was genius of him to combine the two recipes because the pizza recipe didn’t have you doing anything special to the venison and the meat made all the difference really. The flavors it picked up from marinating and the tender, shredded texture it got from cooking all day were excellent. The veggies were red onion, red pepper, green pepper and mushrooms. He can definitely make this again. 🙂


A very busy night followed of getting everything ready for the Chicago trip until I was finally able to crash at bed-time. Can’t wait to share pictures and details of our trip, it’s going so great!!

Thursday’s Food Journal:

  • Breakfast – juice
  • Lunch – spaghetti squash w/veggies
  • Supper – 2 pcs. venison pizza
