NO NOODLES NEEDED

I updated my Let’s Get Away page with the Knoxville trip. It’s so fun looking back at all of our trips, I can’t believe just how many there have been in a years time! We sure do like to get away… 🙂

Yesterday was great on the workout front! I did the gazelle in the morning, a lot of pushups/jumping jacks/free weights at nap-time, a 65 minute spin class (super sweaty spin class!!) in which I did 22.4 miles and burned 431 calories, and then an after-dinner Greenway walk with Zach for 25 minutes (1.1 miles and 139 calories). Whew, that sounds like a lot! It really didn’t feel that way though with it all stretched out.

When I got home from spin class I walked into a delicious smelling house, Zach cooked dinner! He made Zucchini and Eggplant Lasagna from “Now Eat This!”. Here’s what he did:

  1. Sliced up eggplant, zucchini and mushrooms, seasoned with S+P and olive oil and cooked them under the broiler
  2. Combined fat-free ricotta with parmigiano reggiano and S+P in a bowl
  3. Spread marinara (we used Muir Glen, a very trustworthy brand in my opinion!) in the bottom of a baking dish
  4. Layer in zucchini, then more sauce, cheese mixture, then mushrooms, sauce, cheese mixture and finally eggplant, sauce and cheese mixture
  5. Sprinkle with fat-free mozzarella and cook for 15 minutes in a 450 degree oven

This was so good that I (ME, a pasta lover) didn’t miss the noodles one bit!! And I definitely didn’t miss the calories. This healthy makeover version took a slice of lasagna from 1,100 calories down to 221!!! Yes, please.

I had two delicious helpings of this. We went on our lovely walk after dinner. We drove out to a different part of the Greenway than we normally walk on and it was fun to have a change of scenery. The night ended with HIMYM- we are in season 4 now! Loving this show 🙂
