Saturday Afternoon

My legs are wore (worn?) out!! I did 45 minutes of alternating sprints/speed-walking and it got pretty tiring by the end. I did 3.6 miles and burned 356 calories! It was so very nice to get a good workout in.

Home to fix up some leftovers for lunch.


The very last of the spring veggie saute over more of the couscous cake (still a small slice of that left).


I have been amazed at how well these vegetables reheat. I feel like a lot of the time reheated veggies take on a mushy consistency (especially peppers) and yet these have stayed nice and crisp.



Now I need to shower and get some things accomplished and maybe even have a little nap? 🙂
