Saturday Evening

After our workout today Zach and I decided to venture into town on an excursion. Our first stop was Hillside Winery, a winery we had visited the last time we were that we really enjoyed!


We had the same cool guy doing our pours and everything and he remembered who we were! Ironically he and Zach have a mutual friend here in Muncie…small world! One of my favorite things about Hillside is that they specialize in Italian style wines (my preference) and have a whole line of bubbly wines. We ran through the tasting, collected our favorite and then moved on to the Old Mill Candy Kitchen.

This place was packed with beautiful, home-made candies. It was a candy lovers paradise! I am not a candy lover though. So our reason for being there?


FUDGE! I had done research on the best place to get fudge in the Pigeon Forge area and this was the consensus. Let me tell you it did not disappoint. We picked up 3 flavors – cookies and cream, mint chocolate and peanut butter explosion.

I was a little worried about taking these large pieces of fudge to the cabin thinking that I may go crazy and eat them all up, but I surprised myself by only having 2-3 bites of each flavor the whole night! Zach on the other hand couldn’t stop! Especially with the cookies and cream haha. On the way back out of town we found a lovely waterfall with a good view of the Smokies.

Back at the cabin we took some pictures and decided on some hot tub and reading time with a glass of wine!

When the sun started setting I whipped out my tripod and collection of lenses and spent the next 15 minutes pretending to be a photographer…

Once the sun had set we watched part of a movie, played some more pool and foosball (we do a lot of this!) and then dubbed it “cocktail hour” and had a magnificent cheese plate and wine!

We had grapes, assorted crackers from Whole Foods and a great collection of cheese: jalapeño pepperjack, smoked gouda, humboldt fog and a red pepper spreadable goat cheese.

Nothing like a good cheese plate! We played more games and finished our movie and generally had fun waiting to get hungry enough for dinner. Finally we were ready to cook! Tonight’s recipe came out of a Taste of Home Healthy Cooking magazine: Mediterranean Pizza.


With a twist! Eggs on top! We rolled out a pizza dough on a lightly floured pan. Zach thinly sliced tomatoes and layered them on the dough (we cooked the dough first for just 5 minutes) as well as mozzarella cheese. I combined oregano, salt, pepper and fresh parsley and sprinkled the spice mixture over the pizza. Spread on thin pieces of fresh basil and finished it off with four organic eggs.

We cooked until it was done and dug in! I had one slice and it was really good.


The spices were a bit overpowering, but the egg on the pizza was fantastic!


We like to get dressed up for dinner sometimes 🙂

The rest of the night was a little more wine, a lot more games and other fun…here’s a sweet gift from my even sweeter husband commemorating our cabin “Moondancer”.


He’s the absolute best and so is this weekend 🙂
